滑蛋河粉

近来好忙,上两个星期我和孩子都生病了加上要转换新工作都
没时间更新部落格。不过我还是会到各位网友的家看看哦。 好吧,今天就请大家来吃滑蛋河吧。

材料:
米粉 半包 (浸泡至软),河粉 1 kg, 少许蒜米,(1大匙黑酱油,2 大匙酱油,2 大匙水 搅匀)
烧热镬后加入油及爆香蒜米后加入米粉,河粉及近搅匀的酱汁 炒至香及熟即可。
酱汁材料:
一颗胡萝卜(切片), 十只大虾(去壳), 1 粒蛋(打散), 2 颗菜心 (切小块),适量 叉烧 及一些鸡肉片(用少许的蚝油,酱油及木薯粉来掩).
少许蒜米
1.5 毫升的清水
2 大匙黑酱油,少许胡椒粉,2 大匙酱清/酱油,1 大匙蚝油,少许海盐
2 大匙马铃薯粉 + 1 大匙清水(搅和)

做法:
1.)烧热镬及油后加入蒜米爆香后加入鸡肉片炒至香。
2.)加入清水后煮至滚
3.)加入胡萝卜,菜心及虾煮至滚。
4.)加入黑酱油,胡椒粉,酱油,蚝油及海盐后试味。
5.)把打散了蛋汁加入搅匀后加入马铃薯粉水搅至汁浓即可。
6.)把酱汁淋上炒好的河粉再加上些叉烧配叁笆笆拉煎辣椒即可上碟

改版香港猪肠粉

改版香港猪肠粉超容易准备,全部买现成的来配搭即可。口感还可以只不过不能和用米浆蒸的比。用米浆来蒸的会比较幼及比较滑.

材料:
数条猪肠粉,
一些鲜虾 (加些麻油,胡椒粉,酱油及少许的粟米粉来腌一下)
一些叉烧(切小块)
酱汁- 120ml 清水,2大匙的酱油,2 小匙糖, 1/2 小匙麻油 (全部搅匀煮滚即可 (随个人口味)。

配料: 少许的炒香的芝麻及少许的炸油葱。

做法:
1.) 把猪肠粉弄开后,把叉烧碎,虾仁排在猪肠粉上后卷起排在盘上蒸十分钟即可
2.)把酱汁淋在蒸好的猪肠粉上再撒些炸油葱及芝麻即可上碟。

Simple Vege 简单的菜

This fried sweet pea posted before, just a bit colorful like traffic light .这炒甜豆的食谱在此 ,可是这次炒得五颜六色好像红绿灯一样。

Ingredients are sweet pea, carrot and yellow capsicum, fish cake, garlic and some prawns. 材料有甜豆,胡萝卜,黄色甜椒,鱼饼,蒜头及虾。

I first time saw this vege at market but I had forgotten the name. It looks alike mustard and taste almost like mustard but it have more curve at the leaf portion and the vegetable seller also did not call it as mustard.
这菜是第一次见(少见多怪 )可是忘了菜名。 看来好像菜心,口感也像菜心但它的菜叶前端比较多曲折 。菜贩也不叫它菜心。
It taste good. If I do see this vege again will ask the name and update to here. 这菜炒了也不错吃。改次再见到这菜时会再问菜贩这菜的名字然后告诉大家。

Black Sesame & Almond Chiffon Cake 黑芝麻杏仁戚风蛋糕

That day when to Annie's blog saw this chiffon very special and just nice I do have the black sesame powder so quickly prepare this Chiffon (If not I will drag to no end. ) I replace the hazelnut with almond ground. (my fridge only have almond ground) It taste good. Annie .

那天在安妮家看到这黑芝麻榛果戚风蛋糕,觉得好特别;刚好家有黑芝麻粉所以就快快动手做了这个蛋糕(不然不知会拖到何年何月哦。 哈哈!!!)我把榛果换成杏仁粉(因为冰箱里只有杏仁粉)。这戚风蛋糕味道不错。 安妮。

Tom Yam Yong Tau Fu 东炎酿豆腐

Found the yong tau fu are so attractive so bought some and prepare in tong yam taste. I prepare this for my family as breakfast. 在菜市见到好美的酿豆腐就买了些回家。这东炎酿豆腐就是今天家人的早餐。

Ingredients 材料:
some yong tau fu 一些酿豆腐
2 tomatoes (each cut to 8) 2 粒番茄(切成8块)
1 carrot (cut slices) 1条胡萝卜(切片)
some Chinese cabbage (cut to small portion) 一些黃芽白(切小块)
1 bunga kantan (cut to 8) 1 朵姜花 (切成8 块)
1 yellow onion (cut to 8) 1 粒大葱 (切成8 块)
1 packet of oyster mushroom (tear to small portion , understand that tear will be nicer than cut , you can taste the texture of the mushroom) 1 包凤尾菇(撕成小块,听说撕比切来得好吃,会有不同的口感)
1 canned button mushroom (cut to halve) 1 罐蘑菇 (每粒切半)
some broccoli (cut to small portion) 一些西兰花(切小块)
some glass noodle ( soaked ) 一些冬粉(浸泡)
some chicken breast meat ( cut slices) 一些鸡胸肉(切片)
1.5 litre water 1.5 升清水

Seasoning 调味料:
3 tbsp tom yam paste 3 大匙东炎酱
2 tbsp fish sauce 2 大匙鱼露
1 tsp sea salt 1小匙海盐/盐
1 tbsp sugar 1 大匙糖





Methods做法:
Prepare to glass noodles - bring a pot water to boil then add in the soaked glass noodle cook, after the boil then drain it and rinse under cold water and set a side.
准备冬粉- 煮滚一锅水后加入冬粉烫至软后拿去过冷水即可待用。
Prepare the tom yam soup 准备东炎汤
1.) Boil the water, after boil then add in the Chinese cabbage and chicken breast meat and cook till it boil.
i.) 煮滚1.5升的清水后加入黃芽白及鸡肉煮至滚
2.) Add in the bunga kantan, onion , carrot, button mushroom cook till boil.
ii.) 加入姜花,大葱,胡萝卜及蘑菇煮至滚
3.) Add in tong yam paste, tomatoes, oyster mushroom and yong tau foo cook till boil.
iii.) 加入东炎酱,番茄,凤尾菇及酿豆腐煮至滚。
4.) Lastly add in broccoli and other seasoning like fish sauce, sea salt and sugar at your taste.
iv.) 最后加入西兰花及其他调味料如鱼露,海盐及糖(依个人口味)
5.) Scoop out the tom yam yong tau fu soup in a bowl and add in some prepared glass noodles and ready to serve.
v.) 把东炎汤舀出放入碗内后加些冬粉即可。
P/S: Add some coriander stem to the soup and garnish some coriander leaf on top of the soup will make the soup more aroma. ( I can't get it when I wanted to cook this so forget it. )
小小贴士:如果放些芫荽茎在汤内及放些芫荽叶在东炎汤碗内会使这东炎汤更香。 (可惜当我要煮时没买到。)
