Peanut And Fish Porridge(花生与鱼粥)


材料
1 杯糙米(未煮前先浸泡数小时)
一些干贝
100克花生(浸泡隔夜)
100克鱼肉 (用腌鱼的调味料腌隔夜)
1.5升/2 升 水 (跟据你喜欢的浓度)
1-2 小匙海盐

腌鱼的调味料

2 大匙酱油,1 小匙胡椒粉, 1小匙麻油, 1小匙煮菜用的酒(随意)

装饰

1小匙麻油,少许的胡椒粉,少许的青葱

Ingredients
1 cup brown rice (soak for few hours before cook)
some dry scallop
100g peanut (soak over night)
100g fish fillet
1.5 liter to 2 liter water (up to how you like it to be (thick or light))
1-2 tsp sea salt (up to your taste)

Fish Seasoning
2 tbsp soya sauce
1 tsp pepper
1 tbsp sesame oil
1 tbsp cooking wine (optional)

Decoration
1 tsp sesame oil
some spring onion
some white pepper

做法

1.)煮滚一锅水,把糙米,花生和干贝煮至软。(我用 slow cooker 煮隔夜, 明早起来就有得吃)。

2.)还未吃以前, 把腌好的鱼肉放进粥内煮至熟。

3.)把麻油,胡椒粉,青葱放进碗内装饰。

Methods
1.) Brown rice, peanut, dry scallop and 2 liter water put in slow cooker/any cook ware cook till soft. ( I use slow cooker cook over night).


2.) Add it fish and cook well.

3.) Dish up and garnish with some sesame oil, spring onion and pepper.

Banana (红香蕉)


还未成熟的香蕉可以看到红里透绿

熟了的皮是全部红色的


不知道这香蕉叫什么名字, 如果有谁知道它的名字, 请告知。
I don't know the name of this banana. If anyone of you know the name of this banana please let me know.


家人都喜欢这香蕉。它很甜,很香。 我们也喜欢那香蕉皮的颜色( 香蕉成熟和未成熟时都是红色的)。
We like it. It taste nice, sweet and fragrant. We also like the colour before ripe and after ripe (all the time in red colour) .

Doughnut 冬纳


这冬纳是在第54期新新饮食中学到的。我喜欢这巧白克力配杏仁。 小孩比较喜欢原味配糖的。
This doughnut is learn from Yum Yum magazine no. 54. I like the doughnut which topping with white chocolate and almond. Children likes those doughnut with sugar.

Yam Paste芋泥


材料
300g 芋头,
45g 糖 (这刚刚好甜,如喜欢很甜可以加多一些糖)
60g 油
装饰- 通常用白果刚好家里没有只好用红cherry.


Ingredient needs
300g - yam
45g - sugar
60g - oil
decoration - ginkgo nuts (normally used) peeled and cooked till soft . But today I don't have the gingko so I just used cherry to decorate it.

Method:
1. ) Peeled the yam and cut into cube steamed and mashed while hot.

2.) Heat up the wok, put in the oil ,sugar and mashed yam. Keep stirring the yam paste till it doest not stick on the wok ( With medium fire. )

3.) dish up and decorate it.

做法:

1.)将芋头去皮,把芋头切成小块;蒸熟乘热压烂成泥。

2.)烧热油,把糖和芋泥放进鑊炒至不黏鑊。(用中火慢慢炒)

3.)装饰后即可。

p/s: 芋头一定要鬆芋泥才好吃。

Fried Mee Sua Fish 炸面线鱼


This is how it looks like @06/07/09.
这是面线鱼的全相。

今早在菜市看到这面线鱼, 就买了回家因为家人喜欢。
This morning see this "Mee Sua Fish" at market , my family like this fish very much.



这是面线鱼的样子。 可惜它的头部被那鱼贩帮我切掉了。
This is how the fish looks like. (Sorry the fish seller help me to cut the fish head. so can't show you the fish head.)

把多余的地方切除(如鱼尾等等)。将鱼起骨。
cut all the excess part, clean and debone it.

准备鱼的调味料, 磨碎那2-3cm 的姜,加入1tbsp麻油, 1 tbsp酱油, 1tsp 胡椒粉. 然后放入鱼及鱼骨一起腌数小时。
prepare this fish seasoning to season the fish and also the fish bone. shred the ginger (ginger about 2-3cm), add in 1 tbsp sesame oil, 1 to 2 tbsp soya sauce, 1tsp pepper. season for few hours.


准备一些面粉,把鱼肉倆边及鱼骨都沾上面粉; 把多余的粉去掉。(也可以用炸鸡粉来沾, 不过我嫌它咸了一点。)
prepare some plain flour to coat the fish. Both side coated with flour and remove excess coated flour. (you may use fried chicken powder but I personally fell it taste salty so I use plain flour.)


烧热油,把鱼及鱼骨炸至金黄色。热热吃,脆脆的,连骨也可以吃下去
Deep fry in hot oil till golden brown colour.

Dried Longan Bread (龙眼杞子面包)



这面包是用面包机做的。 是个简单又好吃的面包。
This bread is make from bread maker. Is a simple and taste nice bread.

材料
(A)
300克高面粉
200克普通面粉
320ml冰水
60克糖
60克牛油
2 小匙即溶酵母
2 小匙海盐/盐
(B)
杞子,龙眼干,葡萄干加起来共1杯。

Ingredients
(A)
300g high protein flour
200g normal flour
320ml ice water
60g Castor sugar
60g butter
2 tsp sea salt / salt
2 tsp dry yeast
(B)
wolf berry, dry longan, raisin all add up about 1 cup

做法
1.) 把全部材料(A)放进面包机内搅拌。
2.) 大约25-30 分钟后,面包机会发出“鸣叫”即刻加入 (B)。等到整个烘面包程序完成取出面包即可。

Method
1.) put in all ingredients (A) to the bread maker and start to mix
2) after about 25-30 minutes the bread maker sound beep then put in the (B) and let it bake till cook.

FATHER'S DAY (父亲节)


这星期日是父亲节。今年我準備了这个玫瑰花巧克力送给爸爸和我的hubby。希望爸爸和hubby喜欢这特别的玫瑰花。
This Sunday is Father's Day. This year I had prepared this "Rose Chocolate" to replace the normal Practise. Hope my father and my son's father (my hubby) like this special rose.


祝爸爸,hubby 和天下的父亲们有个“快乐及甜蜜”的父亲节。
Wish my father , my hubby and all father's Have a "Sweet and Happy Father's Day" .

Brown Rice Yam Cake

Ingredient needs

300g brown rice (soak for 8 hours) drain it and add in 720ml - 750 water to blender and blend it till fine.

yam - about 400g (after peeling).

10-15 shallot cut to slices.

100g dry shrimp. Soak for a while then blend it.

100g dry sweet radish. Wash it and soak for 3-5 minutes.

some finely chopped garlic, quite a big portion, needs for 3 cooking. Some for fry the dry shrimp, some for the yam cake and some for chili sauce.

1 tsp five spice powder

spring onion and red chili for decoration. coriander leaf for chili sauce.

Method

1.) heat the wok, put in 2 cups oil, fry the shallot till golden brown colour. Let cool for while then keep in air tight container.


2.) the oil leave about 2 tbsp in work , put in some garlic, sweet dry radish and blend dry shrimp. fry till dry add in 1 tsp sugar and continue fry till fragrant then dish up.


3.) Add in about 2 tbsp oil, put in some garlic fry till fragrant then add in yam fry for a while till fragrant then add the blended brown rice (together with the water) and five spices powder. Cook till the batter become thicker as the photo below then transfer to the baking tin. (the whole baking tin must grease with oil).
Wait for the steamer's water boiled then steam the yam cake for 20 minutes or till cooked.



After the yam cake cooked, transfer out from the steamer and let it cool before cut it.
- Ready to serve.

To prepare the chili sauce, put in 5 to 6 tbsp Thai chili sauce, some finely chopped garlic and finely chopped coriander. mix well.

garnish the yam cake with some, spring onion, chili, fried dry shrimp, dry shallot and chili sauce.
P/S : This yam cake will taste nicer compare to using rice flour type, cause it don't have the dry flour smell.

Savoury Pancake (2)

Ingredient to prepare for filling
read from front of the plate, some french beans cut thinly, some shred of dry cuttlefish, finely chopped garlic and some dry scallop.

one onion shred, 1 carrot shred and 1 sheng kuang shred.
some finely chopped fresh prawn.

Method of Cooking the Filling.
1.) put in some oil , add in the garlic and chopped prawn, dry scallop and cuttlefish fry till fragrant.

2.) add in onion, carrot and sheng kuang and some water and fry. Add in 1 tsp sea salt / salt , 2 tbsp soya sauce, pepper and some oyster sauce. Simmer for a while till soft .


Ingredient to prepare the pancake
200g glutinous rice flour
1 tbsp tapioca flour
400g water
2 tbsp chopped spring onion
2 eggs
1 tsp sea salt/ salt
some pepper

Method of preparing the pancake
1.) Mix well all the pancake ingredient.

2.) Heat the non-stick pan, add in a bit of cooking oil. pour in one small scoop batter to the pan and swirl to round shape.
3.) Fry till cooked and transfer to plate.
4.) Put in some filling on the pancake and roll up.



p/s : This pancake texture very soft.
