Hubby's Birthday cake

Tomorrow is my hubby's birthday so prepared this tiramisu cake for him. Hope he likes it. Actually my son and myself plan to surprise him with this cake on tomorrow morning somehow my youngest son break the secret. He saw his daddy back from work quickly tell him that we had baked a tiramisu cake for him ....

Wish him Happy Birthday and May all his wishes come true.

Butter cream and fondant cup cakes




This cup cake is my first attempt to fondant. Today spend whole day at kitchen try to decorate the cup cakes with some little fondant and some butter cream. It is fun to decorate with fondant. Need more practice to improve my fondant cup cakes.

Barbie Doll Cake

This is my first try on barbie doll cake. I learn this from Christine . Thank you so much to Christine.

Yesterday was my neighbour daughter's birthday. My neighbour ask me to prepare a cake for her and the little girl ask for barbie doll cake. So I prepared this cake for the little girl, Hope she likes it. Thank you so much to my neighbour give me the chance to try on this barbie doll cake else I will not have the chance to try on it cause I don't have little princess at home.

Dinner At Home (1) 在家的晚餐 (1)

咸蛋鸡 salted egg fried chicken
葱炒蛋 spring onion omelet egg
炒菜心 fried vege

蒸鳕鱼 steam cod fish



我的孩子刚刚考完试, 妈妈也轻松得有心情下厨了。 今晚就在家煮几道菜在家吃个轻松的晚餐。
咸蛋鸡, 这食谱是在 Y3K里学的。

材料:
3 支鸡腿(切成5或6 块)
3 粒咸蛋黄(蒸熟后压碎)
10 片加哩叶
5 颗小辣椒(拍扁)
1颗大葱(切片)
5 瓣蒜头(切碎)
2 杯油(炸鸡用)
2 大匙油

腌料:
2 大匙酱油
1 大匙蚝油
1小匙胡椒粉
1 大匙薯粉

做法:
1.) 用腌料腌切小块了的鸡腿一小时。
2.) 烧热镬加入油,把(1)炸至熟后把鸡肉捞起。
3.)洗清洁镬后倒入2大匙的油加入蒜头,大葱,加哩叶,小辣椒炒至香后加入咸蛋碎炒香 。
4.) 加入炸好的鸡肉入镬炒至均匀即可上碟。

salted egg chicken
Ingredients:
3 pcs chicken drumstick (cut to 5 or 6 pieces)
3 salted egg yolk (steam till cooked and mashed it)
10 pieces curry leaf
5 chili padi / small chili (smashed it)
1 onion (cut thin slices)
5 garlic (chopped)
2 cups cooking oil (use for frying chicken )
2 tbsp cooking oil

seasoning :
2 tbsp soya sauce
1 tbsp oyster sauce
1tsp pepper powder
1tbsp tapioca flour

method :
1.)season the chicken with seasoning at lease 1 hour .
2.)heat up the wok then add in 2 cups of oil and fry (1) till cook. drain it and clean the wok.
3.) heat the wok and add in 2 tbsp cooking oil to the wok then add in garlic,onion , curry leaf, chili fry till aromatic.
4.) add in the mashed steamed salted egg yolk and chicken (2) fry till well mix and aromatic will do.

Longan Jelly 龙眼菜燕


好久没 update blog了。(不知我家是否灰尘满满的。。。。哈哈!) 趁今天孩子们考完试了,自己也没这么忙就来煮个甜点来给家人吃。请大家来吃这个清凉的甜品吧。

材料:
1 包燕菜粉
1 罐淡奶
1 罐罐头龙眼
4600 ml 的水
数片香草
550g - 600g 糖 (我用了550g, 我家人比较喜欢少糖的食品)

做法:
1.)把 4600ml 的水 倒入一个大锅, 加入一包燕菜粉, 香草及550g 糖煮至滚(要不停的搅拌)后息火.
2.) 倒入一罐400ml 的淡奶搅匀后倒入杯内。 待冷后放入冰箱冷冻。
3.)要吃时放入2 粒罐头龙眼及2 汤匙的龙眼水即可。

Ingredients :
1 packet jelly powder (about 25g)
1 canned evaporated creamer
1 canned longan
4600 ml water
few piece pandan leaf
550g - 600g caster sugar (I used 550g cause my family members don't take so sweet)

Method :
1.)Pour in the 4600ml water to a big pot, add in the jelly powder, sugar and pandan leaf cook till boil. (keep steering ) and off the fire.
2.) pour in the evaporated creamer (about 400ml)and mix well. Pour to the container and keep chilled.
3.)Before serve add in some longan and the longan syrup and eat together with the jelly.

清汤王帝面

近半年来,每天都很忙所以没有时间煮面来当早餐。丈夫及孩子们都吃面包吃到怕了。刚好昨天到菜市逛一逛,买了些胡萝卜,香菜,鸡肉及鱼丸来煮这清汤王帝面。
煮沸一锅水加入面把面烫软后加入装满冷水的冷水盆内过冷河捞起滴干即可。
材料有香菜一颗 (切小段)
鸡肉一块,一些香菇
一条胡萝卜切片。
一些炸鱼丸及炸腐竹片

调味料:
盐,胡椒粉

煮法:
1.)把2 公升的清水/鸡汤(放鸡汤比较有味道及好吃)煮滚后加入鸡肉,香菇,胡萝卜,鱼丸煮至滚后再加入炸腐竹片,香菜及调味料煮至滚即可。

My Son's Birthday Cake



Last Saturday was my son Jeffery's birthday. This year he requested a cheese cake. I found this cheese cake from mybakez's blog. This cheese cake is chilled cheese cake; quite easy to prepare. I replace the strawberry to peaches because my son likes peaches very much. Thanks mybakez share such good recipe.

Durian Sponge Cake



Yesterday was my good friend- Sean's birthday, so bake this simple Durian Sponge Cake for her. Hope she like it.

To prepare this Durian Sponge Cake is very simple. You just need 400g low sugar SpongeMix, 6 eggs , 200g durian flesh and 170g melted butter will do. The method of doing it you may refer to Banana poppyseed sponge cake. I just replace the banana to durian flesh.

Happy Father's Day 2010


Wish my father , my hubby and all father's "Happy Father's day".

Prepared a blueberry ice-cream cake for my children to celebrate father's day.

Ingredients:
a 9 inch loose base mold
one 9 inch sponge cake
some fruits (for decoration)
200g non dairy whipping cream
some biscuit (for decoration)

blueberry Ice -cream ingredients:
250g non dairy whipping cream
200g blueberry pie filling
90g full cream milk

method:
1.) Whipped the non dairy whipping cream with high speed about 3-5 minutes to form peak.
2.) Add in the full cream milk and blueberry pie filling to (1) and mix well
3.) Sandwich the cake with (2) in the 9 inch loose base mold and keep in freezer to let the ice cream set. (I keep it over night)
4.) Remove the cake from the loose base mold and place it onto the cake board.
5.) Whisk the 200g non dairy whipping cream until stiff.
6.) Cover the whole cake with whipped whipping cream (5) and decorate it with some fruit and biscuit.

Teacher's Day


Last Thursday, my son's school celebrated Teacher's day . I had baked 3 tiramisu cake , one for my standard 3 to standard 6 form teacher and the other two for two sons form teacher and prepared 90 eggs jelly for two's class party. Hope the teachers like the cake.

Colorful Egg Jelly



My son requested this jelly two weeks ago. Last weekend prepared this colorful egg jelly for my children. Before prepare this jelly I have to collect the egg shell . So every meal prepare for any egg dishes or bake any cake quickly keep the egg shell.

Before break a hole on the egg have to wash the egg to make sure the egg's shell is clean and break a small hole on top of the egg in order to let the egg yolk and egg white come out. After take out the yolk and egg white wash the egg shell's inner layer clean and dry it.
To prepare the colorful jelly ingredients are:
1/2 tsp jelly powder
100ml water - (light blue color is 85g bunga terang water + 1 tbsp coconut milk)
2 tbsp sugar (adjust according to your taste)
2 pcs pandan leaf (screwpine leaf)

all ingredients mix well and bring to boil and place onto a plate and let it set.
This red color jelly I plan to use red dragon fruit to prepare but cannot find the red dragon fruit so I use s 1/4 tsp red yeast powder mix with 100ml water)

This pink color is red yeast rice powder + coconut milk.
This light green color is pandan juice + coconut milk.
This blue color is bunga terang mix with hot water and get the blue color water.

After all the color jelly are set then cut to small piece. (you may use fruits to replace the color jelly, just cut all color's fruit to small piece will do.) I use peach as yellow color.

Boiled a pot of hot water and rinse all the egg shells with the hot water. (in order to and
fill the egg with the color jelly and fruits then prepare to cook the transparent jelly to fill the eggs full.

Transparent color jelly ingredients :
2 1/2 tsp jelly powder
500ml water
80g sugar (adjust according to your taste)
2 pcs pandan leaf (screwpine leaf)

mix well all the ingredients and bring to boil then fill into the egg shell. (after the jelly is boil then pour the jelly to measuring cup will be easy for us to fill to the egg shell.)

**(500ml water can fill up to 12 -14 eggs)

(if want to place the egg on the egg tray must make sure egg tray is clean.)
