Angry Bird Cake and Cupcakes (recipe added)




Today busy with angry bird birthday cake and cupcakes. The birthday days for my neighbour's daughter. The angry bird cupcakes for my lovely son's tuition party.

Wish the Birthday girl all the best and hope she likes the cake.

Cupcake recipe.

Ingredients :
250g butter (in room temperature)
90g caster sugar
5 egg yolks
70g fresh milk

230g rose flour / plain flour (sieve)
1 tsp baking powder
1/2 tsp baking soda

5 egg whites
90g sugar

Method:
1. Preheat oven at 180°C.
2. Whisk egg whites and sugar until soft peak formed.
3. Cream butter and sugar till light then add in egg yolk one by one ( till you can't see the yolk then add in another yolk).
4. Add in fresh milk to the mixture.
5. Add flour,baking powder and baking soda to the mixture and mix well.
6. Fold in the beaten egg whites to the mixture and mix well.
7. Pour the well mix mixture to the paper cup case ( about 24g per cup).
8. Bake for 20 minutes or till done.

Ingredients for angry birds.

1 round marshmallow cut to few slices
some strawberry jam
2 chocolate chips
some butter cream
2 bars cooking chocolate (to decorate the eyebrow)
1 yellow marshmallow cut to triangle shape (to decorate the beak)

Methods:
1. Spread the strawberry jam to the cup cake .
2. place the white marshmallow to the bottom of the cup cake surface.
3. place the yellow marshmallow above the white marshmallow.
4. pipe out the butter cream into two circle shape above the yellow marshmallow (beak) and place the chocolate chips in middle of the butter cream as eye.
5. place the 2 stick of cooking chocolate as v shape above the eye.

卤桔子 (932 水)

在这炎热的下午来一杯酸甜的卤桔子水必定解渴。在北马一带的咖啡店都称这水为(932)。
今天好友KM 给了我一袋的桔子所以就弄了这速成的卤桔子。


材料:
桔子一些
酸梅一些
白糖适量

做法:
1.)用刷子把桔子皮洗干净后煮滚一锅热水把桔子烫一烫后捞起滴干水。这是我的好朋友教的 。
2.)用刀把桔子上端切一下后把酸梅挤入桔子内 (最好在蒸盘内做这一个动作,当挤入酸梅时可以把挤出的桔子汁留在蒸盘内)

3.)全部桔子挤入酸梅后用白糖掩盖着桔子。
4.) 把掩盖了白糖的桔子拿去蒸至糖溶,待冷后放入干净的容器内放入冰橱即可。

5.) 要喝时,用干的汤匙拿出一,两粒的桔子及少许的汁加入白开水及冰块搅匀即可。

Chill Durian Cheese Cake With Recipe



Prepare this cake for my son's birthday on July. Recipe refer to Felvin's Mangoes cheese flan. I used 150g durian flesh to replace the mangoes.

( Base

200g Digestive biscuit - crushed.

100g melted unsalted butter


(Filling

(A)

150g Dairy whipping cream - whipped


(B)

1 tbsp gelatine powder

3 tbsp water

* mixed the gelatine and water then double- boiled until dissolved.


(C)

250g cream cheese

45g brown sugar

1 tbsp lemon juice

* Beat cream cheese and slowly add in brown sugar until smooth then add in lemon juice


(D)

150g durian flesh (blended)



Method


Base

Mix biscuit crumbs with melted unsalted butter evenly and press into a 9"round loose base cake tin. Chill in the fridge for 20 minutes or until firmed.


Filling

1. Cream (C)till smooth then add in (B) ,and add in (A) and (d) mix well.

2. Pour the mixture (1) onto the prepared Base.

3. Chilled overnight in the fridge then serve.

Strawberry Cheese Cake for August Birthday boy and girl



These two strawberry cheese cakes was prepared two days ago. These cheese cakes is for my friend who celebrate his birthday (yesterday) and her birthday (today). Wish Them Happy Birthday!!!!

I learn the recipe from felvin. I replace the mangoes with the strawberry pie filling. With this recipe I manage to 2 cheese cake : 1 for 6 inch mould and 1 for 7 inch mould.

Cempedak Cake




Yesterday, my good friend brought me cempedak all the way from Penang. This cempadak taste very good and aromatic. So I quickly keep 250g of the flesh to bake a cempedak cake which learn from Bouquet-Garni. It is simple and taste good. Thanks Bouquet- Garni.

Coconut Cake (Khanom Bah Bin)



Learn this from chef Azrah Kamala Shashi's Thai Food recipe book. I feel this cake is easy to prepare and taste good.

Ingredients :
2 eggs
200g flaked (hand grated) , peeled coconut ( I use 260g and just bought the white peeled coconut)
310g sugar (I use 240g taste very sweet to me, next time I will only use 200g will do. )
75g glutinous rice flour , sifted
35g arrowroot flour (sago flour ), sifted
1 tsp vanilla essence ( I use 1/2 tsp only)
2 egg yolks , (beaten, egg wash, I forgot this but luckily the cake turn out good )

Method:
1. Combine the eggs, coconut flakes, sugar, glutinous rice flour, arrowroot flour and vanilla essence to form a creamy batter.

2. Grease 15-cm / 6 inch fluted muffin tins. Spoon the batter into the tins and top with the beaten egg yolks. (I use paper case line on the tart (4.5cm) mould.)

3. Bake in a preheated 180ºC / 350ºF oven for 20 minutes or until golden. Cool completely before removing from the tin.

P/S: With this recipe I manage to have 54pcs coconut cake. (4.5cm tart mould )

Sweet Corn Steam Cake 粟米马来糕


This morning bought some sweet corn from market, so prepare some sweet corn steam cake for my children's tea break. Learn this steam cake from Famous Cuisine no. 68. This steam cake is easy to prepare and taste no so sweet. I did two portion , first portion use caster sugar and second portion I use brown sugar. I preferred the brown sugar sweet corn steam cake.

Ingredients (A):
2 eggs (I use grade A eggs)
70g caster sugar

Ingredients (B):
130g self raising flour
1/4 tsp bicarbonate of soda
80ml thick coconut milk
120g sweet corn kernels

Method:
1. Whisk egg with sugar become soft forms, gradually add in coconut milk until well combined. Next, put in sweet corn kernels, mix well.

2. Add in self raising flour and bicarbonate of soda, mix well.

3. Spoon mixture into the greased heatproof cups evenly. Steam in the preheated steamer over high heat for 10 minutes till done. Dish out, leave to cool and serve.

p/s: I do not greased the mould, I put in the paper case onto the mould cause I lazy to wash the mould ( he he ......... after used I just rinsed the mould will do .)

I spoon 3 tbsp for each cup I managed to get 11 cups steam cake.


今天在菜市场买了些粟米所以就准备了这粟米马来糕给孩子们做茶点。在第68期的名食谱学到了这容易又不是很甜的糕点。今天做了两份粟米马来糕,一份是用白糖做另一份是用黄糖做。我比较喜欢用黄糖做的粟米马来糕。

材料(A):
2 粒蛋 (我用A蛋)
70g 细砂糖

材料(B):
130克 自发面粉
1/4 小匙 苏打粉
80 毫升浓椰浆
120克 粟米粒

做法:
1. 鸡蛋和糖一起打发至松白,徐徐加入椰浆拌匀;再加上粟米粒混合均匀。

2. 加入自发面粉和苏打粉, 轻轻搅拌均匀成糊状。

3. 把面糊分别放进已涂油的杯子里, 盛入预热的蒸锅,盖上, 以大火蒸10 分钟即可。

ps: 我没涂油在杯子里, 我把纸杯放入杯子里(哈哈。。。。我懒惰洗模具,用 paper case 我只需要用清水冲洗就可以了。)

一杯放 3大匙(吃饭的汤匙)的面糊, 可以做出11 杯的粟米马来糕。

茶叶蛋 herbal tea egg




哇!好久没更新部落格了,希望 网友们还记得我。 这都因为“忙” 的关系 不过我一有空上网就去姐妹们的家潜水了。今天就请大家来吃茶叶蛋。

材料 :
30 粒 b/c 蛋
200-230g 酱油/酱青
200-230g 糖
1 小匙海盐 / 白盐
1 大匙黑酱油
适量清水 (盖过蛋即可)
1 包 家家乐茶叶蛋香料 / 其他牌子茶叶蛋香料 (个人比较喜欢家家乐牌子)

做法:
1. 把鸡蛋洗清洁后放入锅内加入清水(盖过蛋)煮至蛋熟。

2. 用汤匙轻轻的敲裂蛋壳后把蛋放入锅内 (我把它放进cw的饭锅)/ slow cooker 内

3. 把酱油,糖,盐, 黑酱油,茶叶蛋香料及适量清水(可盖过蛋)加入锅内稍微搅一搅即可。

4. 煮最少2 小时后就可享用美味的茶叶蛋。 越煮越久蛋会更香更好吃。 (我用煮汤/粥的功能来煮茶叶蛋,我把烹调时间换去4 小时)

Ingredients :
30 eggs (grade b / grade c)
200g - 230g soya sauce
200g - 230g sugar
1 tsp sea salt / white salt
1 tbsp dark soya sauce
some water (can cover the egg will do )
1 packet jia-jia le mix herbs and spices / other brands mix herbs and spices also can

Method:

1. Clean up the egg shell and cook it till boil. (hard boil egg) .

2. Use spoon to knock on the egg shell to have the shell crack then put it into the slow cooker / rice cooker (I use cw rice cooker to cook )

3. Put in soya sauce, salt, sugar, dark soya sauce and the packet mix herbs and spices and some water ( cover the egg) to the pot and mix well and cook for at least 2 hours .

4. The longer time you cook the egg will be more aromatic and taste better . ( I use soup/porridge function to cook this herbal tea egg and I cook 4 hours ) .

蓝花糕


昨天好友送来一瓶晒干的蓝花,拿了一把干蓝花加一杯水(大概200ml)去煮滚后就成了蓝花汁。就用饭煲煮蓝花糯米饭后加些kaya就变成蓝花糕了。(还蛮容易的)哈哈! 懒人的做法。

材料:
糯米 - 5杯 (用什么杯都可以, 接下来的材料都用同一个杯来量)
椰浆 - 1 1/2 杯
清水 - 3 杯
盐 - 1 1/2 小匙
蓝花水 - 1/2 杯
咖椰 - 1瓶

做法:
1. 把糯米洗清洁后放入饭锅内再加入清水,椰浆及盐后开电即开始煮了(普通煮饭而已)。
2. 饭煮后15分钟放入蓝花水煮熟即可。
3. 把煮熟的糯米饭放入四方的蛋糕盘 (比较容易切)后用汤匙铺平及压紧后放置待冷。
4. 切块涂上咖椰即可享用。

Jelly Cake



Last Saturday was my friend's daughter wedding day, my friend ask me to prepare a Jelly cake for her daughter. I prepared this bridal jelly cake for the bride. Hope she like it.

All the jelly color are natural color. The 1st layer I use watermelon juice , 2nd layer was watermelon juice mix with coconut milk. 3nd layer was coconut milk mix with pandan juice . 4th layer was coconut milk mix with blue clitoria flower water (some dry blue clitoria flower boil with water) and the last layer color was blue clitoria flower water.

Valentine Dinner




We just taken our Valentine Dinner at home. Today’s menu are tom yam soup, appetizer will be apple raisin salad and main course will be Salmon and chips , Black pepper mushroom chicken chop and Satay chicken chop. Dessert will be banana split and chocolate nescafe banana cake.

Jeffery (my elder son - asked for Black pepper mushroom chicken chop. We all like the black pepper mushroom chicken chop. It taste good. will post the recipe soon.

I prepared satay chicken chop for my hubby.

After the dinner I really surprised by hubby, he bought me a valentine present. Thank you very much Darling!!!!!!!!!!!!!! I never thought I will receive valentine gift from you cause we already 老夫老妻了。 老公,谢谢你。。。。。。。

Valentine Cake




Happy Valentine Day To Everyone.....

Today I baked 3 heart shape cake for this romantic day. The 1st cake definitely will give to my lovely husband. The 2nd heart shape cake will give to my friend's son Alvin who was on valentine day and the 3rd heart shape cake will give to my friend YS who was born on this month。


Chocolate Nescafe Banana Cake

Ingredients
3 pcs 6 inch heart shape cake pan
360g Sponge mix
40g Chocolate powder
8 eggs
100g water
100g corn oil

Cake Filling :
3 bananas ( sliced)
1 packet 3 in 1 nescafe
250g non-dairy whipping cream

Ganache:

300g chocolate (cut slices / cut cube)
150g dairy whipping cream
50g butter

decoration
some baked almond flake ,sliver almond and walnut
some star shape sugar, some love shape sugar, some color ball and some silver ball

Method:
1.) Lined the mould with paper
2.) Put in the egg,water and sponge mix flour and chocolate powder into the mixing bowl.
3.) Whip (1) till light and fluffy.
4.) Mix oil with the batter till well blended. pour in 330g batter to each heart shape cake pan. Bake at 180℃ for 30 minutes. Once baked, remove cake immediately from the mould.
5.) Leave the cake completely cool before cutting into 3 layers horizontally.
6.) Filling : whisk the non-dairy whipping cream and 3 in 1 nescafe till stiff.
7.) Spread filling onto 1st layer of cake and arrange the banana slices on top of the filling and spread some filling onto the banana and cover with 2nd layer cake .
8.) Repeat (7) till for all layers of cake. Leave in fridge to set. For the last layer just placed the cake on top of the filling .
9.) Heat dairy whipping cream , chocolate and butter in double- boiler stir till chocolate melt.
10.) Place cake on a wire rack, pour on chocolate ganache and decorate, refrigerate till set.

今年拜天公的糕点都是自己弄的。 有米龟,米糕,发糕。

米龟(忘记拍照片)食谱是跟着第58期的Y3K做的,出来的效果超满意。

米糕是用这个饭锅煮的(超容易)。 我不喜欢白色的米糕所以就鸡婆用萝卜汁来煮糯米, 还好出来的的米糕还见得人。 哈哈!

米糕的材料:

2 碗 白糯米(先浸4 小时)
1 碗半的萝卜汁 (用3 颗萝卜较出来的汁)
半碗浓椰浆 (大概RM1.00 的椰浆)
2-3片香草叶
十大匙白糖

做法:

1.) 把糯米,萝卜汁,糖及香草叶放进饭锅内后按《快煮》煮至熟。
2.)把香草叶拿掉后加入浓椰浆搅拌至全部的糯米饭都沾到椰浆。
3.)趁热 我把糯米饭放进鲤鱼燕菜模内用汤匙压紧(用葡萄干做成鲤鱼的眼睛- 这是在Anncoo的家 学的)
4.)把鲤鱼米糕脱模后排在盘上即可。
