Taiwan- Day 1 在台湾的第一天

This Just my trip's record. 这是这次旅程的记录。
On 16th September 2009 went to Taiwan with 9 goods friends. Depart from Penang airport @ 2.45pm , Arrived Taiwan about 7.30 pm . The 1st stop for the 7 days trip is Shilin night Market. We had tried some of the local food. I like most is the white bitter gourd juice, fried chicken chop and "lu rou rice" .
九月16日和九位好友一同去台湾旅游。在槟城机场出发,抵達台湾是大概7.30pm。这七天的旅程第一站是士林夜市。我们试了好多当地的美食。我最喜欢的是白苦瓜汁 ,鸡排及卤肉饭。这卤肉饭 又香又好吃,味道有点像我们的罐头红烧猪肉弄碎。

Udon Noodle 清汤乌冬面

This was simply cooked . Luckily all my family member like it.这是乱乱煮出来的清汤乌冬面。 幸好家人都喜欢吃。

Ingredients 材料:

10g seaweed 10克海苔/紫菜
1carrot (cut small portion) 一条胡萝卜(切小块)
some filament stick (cut small portion) 一些蟹柳 (切小块)
some chicken bone (to prepare chicken broth) 一些鸡骨(用来准备鸡汤)
1 packet udon noodle 一包乌冬面
1 piece konbu 一片昆布
half piece chicken breast meat 半边鸡胸肉
2 litre water 2公升清水


Method 做法:

  • Cook a pot water (about 2.0 litre) till boil. After boil, take some hot water to rinse the chicken breast meat and chicken bone.

  • After rinse add the chicken breast meat and chicken bone and a piece konbu to the pot to cook as chicken broth. After cook, take out and throw away the chicken bone and konbu.

  • take out the chicken breast meat and shred it as chicken shredded.

  • seasoning the chicken shredded with 1 tbsp soy sauce, 1/2 tsp ground pepper and 1/2 tsp sesame oil

  • Add in the carrot to the chicken broth. Cook till the carrot soft.

  • Add in the filament stick and seaweed cook till boil , add in 2 tbsp soy sauce and 1/2 tsp sea salt and chicken shredded then ready to serve.

  • 煮滚一锅水(大约2公升),拿出少许热水浸泡鸡胸肉及鸡骨一下后把鸡胸肉,鸡骨及昆布放进锅内煮至鸡胸肉熟。取出昆布及鸡骨;把鸡肉拔丝成鸡肉丝。留在锅内的汤就是高汤。

  • 把鸡肉拔丝加入1 大匙的酱油,1/2 小匙胡椒粉 及1/2 小匙 麻油调味

  • 把高汤煮滚后加入胡萝卜块煮至胡萝卜软。

  • 加入蟹柳块及海苔/紫菜煮至滚后就加入鸡肉丝。

  • 最后加入2 大匙酱油,1/2 小匙海盐调味即可.

To prepare the udon noodle - boil a pot of water, after boil then put in the udon noodle to cook till soft then drain well and ready to serve.
To Serve - scoop the soup to the bowl and place in some udon noodle will do.

准备烫面 - 烧热一锅水,水滚后把乌冬面加入去烫至软。沥干水份。
食用- 把清汤盛入碗内加入烫熟的乌冬面即可。

Coral Grass White Fungus Soup 珊瑚草雪耳甜汤

This dessert is cook with coral grass. 这甜汤是用机珊瑚草和白木耳一起煮的. This coral grass was introduce by a friend nutrients-yoga-craft . 会食用这珊瑚草是nutrients-yoga-craft 这位朋友介绍的。谢谢 “nutrients-yoga-craft”。

Ingredients 材料:

Some soaked coral grass 一些浸泡了的珊瑚草

2 litre water 2公升清水

150g rock sugar 150克冰糖
some seedless red date 一些无核红枣
one packet ~200g white fungus (soak till soft)
一包大概200克白木耳/雪耳浸泡至软

some wolfberries and 200g winter melon candy
一把枸杞子及200克冬瓜条(糖冬瓜)
Method做法:
1. Boiled the water, after boil add white fungus,red date and wolfberries cook till white fungus soft.(you may use slow cooker or slow fire to cook till the white fungus soft.
2. Add in the winter melon candy and rock sugar cook till sugar melt.

3.Remove from heat, add in the coral grass . The coral grass will dissolve while hot.

4. Dish up and enjoy the soup.
1.)煮滚清水后加入白木耳/雪耳,红枣,枸杞子。(可以用slow cooker 来煲或用小火煮至白木耳/雪耳软。
2,)加入糖冬瓜/冬瓜条,冰糖煮至糖溶。
3.) 息火后,加入珊瑚草。 珊瑚草会溶在热汤内。
4.) 盛起享用。

Tuna Sandwich 金枪鱼三文治

This Tuna Sandwich is very common to every family . Nothing special, but is very easy to prepare. When I out of idea for breakfast and lazy then this tuna sandwich will be serve the next morning.
金枪鱼三文治在大多数人的家可说是很普通的三文治。这三文治没什么特别可是容易准备。当我不知道 要弄什么早餐给家人吃时又加上懒虫的拜访,这金枪鱼三文治就会成为隔天的早餐了。


Ingredients 材料:
1 canned chunk tuna in water 一罐金枪鱼
1 carrot-finely chopped 1条胡萝卜剁碎
1 onion-finely chopped 1 粒大葱剁碎
4 filament stick - (blanch with hot water then remove and finely chopped) 4 条蟹柳 - 用热水烫过后剁碎。
3 tbsp mayonnaise 3 大匙沙律酱
1/2 tsp ground black pepper 半小匙黑胡椒粉
1 Japanese cucumber (cut thin slices)1 条日本青瓜 (切薄片)
1 tomato (cut thin slices)1粒番茄(切薄片)
2 lettuce 2棵生菜
1 loaf white bread/wholemeal bread 1 条白面包/全麦面包
some butter to spread on bread 一些牛油用来搽面部





Method 做法:

  1. Mix well, chopped onion,carrot,filament stick and tuna fish,black pepper,mayonnaise .
  2. Spread butter on 2 pieces bread
  3. Place lettuce,tomato and cucumber on top of one piece bread
  4. Spread some tuna mixed on top of (3).
  5. Cover up with another piece bread.
  6. Cut to 2 or 4 to serve.

  1. 把剁碎的洋葱,胡萝卜,蟹柳,金枪鱼,黑胡椒粉及沙律酱搅拌均匀。
  2. 把牛油搽在两片面包上。
  3. 把生菜,番茄,黄瓜排在其中一片面包上
  4. 把一/二大匙搅拌好的金枪鱼放在(3)上。
  5. 另一片搽好牛油的面包盖在(4)
  6. 切成2或4块即可。

ABC Soup Pie

This is the view of the ABC Soup pie. We took this for breakfast My elder son like it very much.

Ingredients :
300g fresh sweet corn
30g barley (washed)
2 potatoes (diced)
1 carrot (diced)
50ml fresh milk
1 packet puff pastry
1 onion (diced)
some chicken bone
1 canned button mushroom (cut to four)
half piece chicken breast meat (diced)
1200ml water (separate to 2 portion - 200ml and 1000ml)
2 pieces bay leaf
1 tbsp butter
1 tsp sea salt

corn flour solution - 1 tbsp corn flour, 1tbsp water

Method:

  1. Melt the butter, add in onion,potato and bay leaf saute till fragrant.
  2. Add in 200ml water cook till potato soft.
  3. let (2) to cold and blend in blender. (blend without bay leaf).
  4. Boil the 1000ml water, after boil put in the chicken bone to prepare chicken broth. (after boil take out the chicken bone.)
  5. Add in carrot, corn, barley,button mushroom, diced chicken breast meat, bay leaf from (3)bring to boil and till carrot soft.
  6. Add in (3) bring to boil again. (needs to stir frequently else the potato starch will stick on the pot)
  7. Add in fresh milk and sea salt (up to your taste). You may add some corn flour solution to thicken the soup.
  8. Preheat the oven to 180c
  9. Put in scoopful ABC soup to small bowl /soup bowl .
  10. Place a piece of the pastry puff on top of the small bowl (fully cover the bowl)
  11. Sent to oven bake for 20 minutes.
  12. Serve when hot.

Fried Wantan炸云吞

My children like this fried Wanton very much. When we out for DimSum , my two kids each one can eat two plate of fried wantan. Each plate cost RM2.70 . If Fried at home it cost me about RM 6.00-8.00 only and whole family can enjoy eating it not only the two kids.

The ingredients are very simple, just need:
500g prawn (finely chopped )
4-5 water chestnut (peel and finely chopped)
1 tbsp fresh parsley.(finely chopped)
1 packet round wantan wrapper
4 cups cooking oil

Seasoning:
1 tsp sesame oil
1 tbsp soy sauce
1 tsp grounded pepper
1 tsp oyster sauce

you may add chopped carrot and chopped yam bean. (my fridge not have the carrot, so I did not put). Since I do have some fried sesame, so I added some sesame to the prawn paste. I feel it taste more fragrant.

Methods:

1.) mixed well all finely chopped ingredients and seasoning.

2.) place some (1) on top of a piece of wantan wrapper and cover up with another piece wantan wrapper. put some water around the wantan wrapper to stick the top wantan wrapper and bottom wrapper.

3.) use a tooth thick to poke on the wantan wrapper in order the air can go off during deep fried.
4.)Heat up oil and deep fried the wantan till golden brown colour. Dish and drain. Serve with chili sauce.



山药雪莲果汤

This soup taste good. 这汤的味道清甜清甜,不错。
Ingredients needs are 材料需要:
1 carrot - (cut small portion ) 1条胡萝卜(去皮切小块) (洗清洁后的山药,还未洗时,外皮是沾满泥的) This is the view of wild yam. (cleaned. before cleaned was cover with soil).

(切开后的山药)

300g wild yam - (peeled and cut small portion) 300克新鲜山药(去皮后切小块)
1 "yacon" 雪莲果 (peeled and cut small portion) 1 个雪莲果(去皮后切小块)
2 chicken drumsticks 2支鸡腿
20g wolf berries 20克枸杞子
20g red date/jujubes(without the seed) 20克红枣(去核)
2 litre water 2公升清水
some sea salt 适量海盐
I don't know how this 雪莲果call in English. Search from Internet understand it call as "Yacon". (don't know how true)
This is "Yacon" It can eat as raw taste like pear(梨). 这是去皮后的
雪莲果。这雪莲果可以生吃。生吃的味道就好像吃梨子一样。
胡萝卜,山药,雪莲果 Carrot,Wild Yam and "Yacon 雪莲果" .



Method 做法:
  1. Boil a pot of water, After boil add in carrot,wild yam,red date/jujubes,chicken drumsticks , wolfberries and "yacon"雪莲果.

  2. After boil, change to slower fire cook about 1-2 hour will do . (I use slow cooker to cook)

  3. Add in some sea salt (your taste) and dish up.

  1. 煮滚一锅清水后加入胡萝卜,山药,雪莲果,红枣,鸡腿,枸杞子再煮滚。

  2. 用慢火煮1-2 小时煮至出味。

  3. 加入海盐(随你的口味)即可。
