DRAGON FRUIT JELLY火龙果燕菜

Impressed by Linnh's dragon fruit jelly and learn the recipe from HongKitchen's original favour agar-agar .This dragon fruit jelly is currently chill in the fridge . This dragon fruit jelly will be tonight's dessert.

I reduced the water to 2800ml and rock sugar to 200g and 1 dragon fruit cut cube.

我被Linnh 的幻灯甜品吸引了,就向阿豐美食心廚房的原味燕菜学做了这个火龙果燕菜。这火龙果燕菜正在冰箱冷冻着。这正是今晚的甜品。

我把水减了200ml. (用2800ml 而已)也把糖减了100克(用200克而已). 用了1粒火龙果肉切小块。

Method of preparing this Jelly.
  1. Boiled the water and the screwpine leaves.
  2. After the water boiled add in the jelly strip and cooked till the strip totally melted.
  3. Add in the rock sugar and cooked till the rock sugar melted.
  4. Lastly add in the dragon fruit cube then turn off the fire.
  5. Place the mixture of (5) to jelly mould and wait till cool then chill it in the fridge.

做法:

  1. 锅内放进清水及香叶煮滚。
  2. 水煮滚后把燕菜丝加入煮至燕菜丝溶。
  3. 把冰糖加入煮至溶及滚。
  4. 加入火龙果肉后马上息火。
  5. 把(4) 放入燕菜模待冷后放入冰箱冷冻。

10 grain rice pumpkin soup 南瓜十谷米甜汤

Cook this 10 grain rice soup for Breakfast. I learn this from a friend (Ms Ooi) .She cooked this and let me tasted it. I found it taste delicious and healthy.

Sorry!!!!!! can't provide the exact weight /measurement for the ingredients ( just as you like) cause it won't spoil the taste.

有一天, 我的朋友 Ms Ooi 煮了这南瓜十谷米甜汤请我吃。觉得这南瓜十谷米甜汤好吃又健康就向她请教怎么煮。所以她教会我了。

很对不起,不能提供材料准确的重量(可以很随意的)因为它不会影响这甜汤的味道。如果你喜欢玉米或其他的你想加多一点那你就加吧。







Ingredients:
1/2 pumpkin (cut cube. half to blend and another half to cook)
2 sweet corn (about 150g. 50g to blend and 100g to cook)
1 cup 10 grain rice (soaked for few hours before cook)
some red colour sweet potato (cut cube)
some purple colour sweet potato ( cut cube)
some sago
sugar - according to your taste
1 to 2 liter water (it might be thick after cooked. you can add water according to the thickening you like)

Methods:
  1. Boil 500ml -700ml water, after boil put in the sweet corn (50g), some pumpkin and 10 grain rice cook till 10 grain rice soft. leave to cool.

  2. Blend (1) till fine .

  3. Steam the sweet potatoes (red and purple colour) , cube pumpkin (balanced) and sweet corn (100g) .

  4. Boil half pot water pour in (2) cook till boil. (must keep stirring it will stick on the pot. After blend to fine it act like starch ). you may add water if it looks too thickening .

  5. Add in sugar and sago boil till sago looks transparent.

  6. Add in (3 ) and dish up.

p/s: if you did not steam the potatoes, corn and pumpkin, you may boil the potatoes while you are steps 4. cook till the potatoes to soft.

材料:

半粒南瓜(切块,一半用来煮,另一半用来和十谷米一起搅拌)

玉米粒(大慨150克,100克用来煮,50克用来和十谷米一起搅拌)

1 杯十谷米(浸泡数小时)

一粒红番薯(切块)

一粒紫番薯 (切块)

一把沙谷米

糖 - 随个人喜欢

1-2 公升水(煮后它会变浓浆所以你可能要加多一些水到你喜欢的程度)。

做法:

  1. 煮滚500ml -700ml 的水,加入玉米粒(50g), 一些南瓜及十谷米。煮至十谷米软。放一旁待冷
  2. 待(1)冷后放进搅拌机内搅拌至幼。
  3. 把红番薯,紫番薯,剩余的南瓜块及玉米粒拿去蒸熟。
  4. 煮滚半锅水把(2)加入煮至滚。(要不停的搅拌不然会黏在锅底。)(搅拌后的(2)就好像浆所以很容易黏底)。如果太浓可水。
  5. 把糖及沙谷米加入煮至沙谷米变透明。
  6. 把蒸熟的红番薯,紫番薯,剩余的南瓜块及玉米粒加入就可以吃了。

小小的提示: 如果不想多工另外蒸红番薯,紫番薯,剩余的南瓜块及玉米粒,可以在(4)煮滚后加入。煮至软后才加糖及沙谷米。

Satay Pizza 沙嗲披薩

A lot of the satay sauce left over after the party so bought the pizza bread,chicken , button mushroom , mozzarella cheese and onion to prepare this satay pizza as breakfast.
生日会后剩下很多的沙嗲酱。买了鸡肉,罐头蘑菇,mozzarella 乳酪,披薩皮及大葱来准备这 沙嗲披薩。把 沙嗲披薩当成我家的早餐。

This is filament stick with button mushroom satay pizza. Just mixed the filament stick, button mushroom with satay sauce.



Sprinkle some mozzarella cheese on the pizza bread (to make the ingredients stick on the pizza base - teach by Yus to Yus ) then put in the mixed ingredients and sprinkle the cheese again on top of the ingredients and bake .


这是用蟹柳,蘑菇及沙嗲酱做成的披薩。把全部材料混合,洒些 mozzarella 乳酪放在披薩皮上才加上混合了的材料这样这些混合的材料才会黏在披薩皮上。(这是Yus 教会的. 谢谢她)

在披薩皮上再洒些 mozzarella 乳酪后拿去烘即可.


Ingredients :
Satay sauce
Chicken fillet (cut slices)
Onion
Pizza bread/Pizza base
Button mushroom (cut slices)
Mozzarella cheese

Methods:
  • cook the chicken and satay sauce till chicken cooked.
  • mixed onion,button mushroom and (1) evenly.
  • preheat oven to 170 ℃
  • sprinkle some cheese on the pizza bread.
  • put in the mixed ingredients to the pizza bread and sprinkle some cheese on top of the ingredients
  • bake for 10 minutes will do.

材料 :

沙嗲酱

鸡肉(切片)

大葱(切圆)

披薩皮/三文治面包片

蘑菇(切片)

Mozzarella 乳酪

做法:

  1. 把鸡肉和沙嗲酱煮至鸡肉熟. 
  2. 把大葱,蘑菇和(1)搅匀.
  3. 预热烤箱 170 ℃
  4. 洒些 mozzarella 乳酪放在披薩皮上
  5. 把(2) 放在披薩皮上后再洒上mozzarella 乳酪后放进烤箱烤10 分钟即可.

Durian Kuih 榴莲糕

Durian Season so blog also follow the season post something related to Durian. This "Durian Kuih" my friend- Yus said they called it "lempuk durian". To make this success have to thank my master "shi fu" YS and Voon.
榴莲季节的到来也要post 一些有关榴莲的食物。Yus 叫这榴莲糕-“lempuk durian”。 要感谢两位师父(YS 和Voon) 教会我做这个榴莲糕。
Just nice do have excess durian at home so cook this durian kuih. separate the durian flesh and seeds.
刚好家有过剩的榴莲所以把它煮成榴莲糕。先把榴莲肉和种子分开。
Place the durian flesh in pot and cook with the slowest fire and keep stir. (If not it will burned).
把榴莲肉放进锅内用最小火慢慢的煮。 要不断的搅拌不然会烧焦。

After 1 hour cook with keep stirring. The colour just turn to light brown. It supposed to be brown colour (about more than 2 hours cook). But.....my hands were very tired!!!!! so gives up to make it in brown colour. Light brown will do.
经过1小时不停的搅拌及煮,颜色变成淡褐色。这榴莲糕原本应该是深褐色的(大慨煮超过2个多小时)但是。。。我的手好酸好酸了。所以放弃不要再煮了。淡褐色就淡褐色吧!!!

Let it cool then roll it up with PE cling film/ plastic wrap or keep in container. Keep in Fridge.
待冷后用保鲜膜卷起或收在容器内。放进冰箱。

fried "tai lok" noodle 炒“大录”面

Fried this "fat" noodle for my family as breakfast.
炒了一大镬的“大录”面成为家人今天的早餐。




Ingredients:
1 packet / 600g " tai lok " noodle soaked over night
fish fillet cut to slices and seasoned with pepper,light soya sauce.
fish ball cut to half
some chopped garlic
1 onion cut to 8
5 black mushroom soaked and cut to slices
some young ginger cut to slices
some Chinese cabbage cut
1 tsp sesame oil + 1 and 1/2 tbsp cooking oil
1 cup water

seasoning:
1 tbsp dark soya sauce
1-2 tbsp light soya sauce
1 tsp oyster sauce

Methods:
  • Heat the wok, put in the sesame oil and cooking oil, add in the garlic and ginger slices. stir fry till fragrant.
  • Add in onion, black mushroom and Chinese cabbage and keep stir fry it till the vege soft.
  • Add in the seasoned fish fillet,fish ball ,water and seasoning (up to your taste) cook till water boiled.
  • Then add in the "tai lok" noodle and let the noodle simmer till gravy become thickening.
  • Dish up and eat with sambal belacan.
p/s : The "Ta Lok" noodle needs to soaked overnight to get rid of the alkaline water smell and the noodle can be easily soft .

材料:
1/600g " 大录" 面浸泡隔夜
鱼肉切片后用胡椒粉及酱油腌。
鱼蛋切半
一些剁碎的蒜头
1 粒大葱切成8 片
5 片东菇浸软切片
少许嫩姜切片
半颗大白菜切片
1 小匙麻油 + 1 大匙半食油
1 杯水

调味料
1 大匙黑酱油
1-2 大匙酱油
1 小匙 蚝油

做法:
  • 烧热镬,放入麻油,食油后加入蒜头及嫩姜片炒至香。
  • 把大葱,东菇,大白菜炒至菜软。
  • 加入鱼肉片,鱼蛋,水及调味料后煮至滚。
  • 把“大录” 面加入镬内用慢火焖煮至汁浓。
  • 上碟,配叁笆笆拉煎辣椒吃。

小小分享: “大录” 面浸泡隔夜可以减少碱水味及面比较容易软。

Simple Lunch 简单的午餐

Today's we have a very simple lunch, steam ladies finger , fry sweet pea and fish.
今天在家准备了简单的午餐。有蒸羊角豆,炒甜豆及炒鲨鱼。



After the steamer's water boiled and let the ladies finger steam for 5 minutes will do. The texture of this ladies finger is very soft.Eat with sambal belacan it taste yummy.

蒸镬内的水煮滚后把羊角豆放入蒸五分钟即可。这蒸羊角豆的口感是嫩嫩软软的。配上叁笆笆拉煎辣椒很好吃。

This dish is fried shark fish with spring onion and ginger.这是姜葱炒鲨鱼肉。

Ingredient needs are:

1 piece shark fish

some ginger , some spring onion, some sesame oil


seasoning
oyster sauce,black soya sauce and light soya sauce


Methods:


1.) Heat the wok, put in some sesame oil then put in the ginger fry till fragrant.

2.) Add in the shark fish ,seasoning (as your taste) stir till cook.

3.) Put in the spring onion, stir for a while then dish up.


材料:

一块鲨鱼肉- 切片

一些姜片,一些青葱,少许的麻油

调味料

蚝油,黑酱油,酱油

做法:

1.) 烧热镬,加入少许的麻油后再加入姜片炒至香。

2.) 把鲨鱼肉及调味料(随个人口味)加入镬内炒至熟。

3.) 加入青葱,快快炒一下即可上碟。

Nasi Lemak Without Coconut Milk 无椰浆的椰浆饭

要吃椰浆饭可是又怕高胆固醇所以就煮了这个没椰浆的椰浆饭.虽然这饭没有椰浆可是蛮香也蛮不错吃. (哈哈, beh pai sei, 自己讲不错吃!!)

Wanted to eat nasi lemak but worry about high cholesterol so cooked this nasi lemak without coconut milk. Even though without coconut milk but its taste "OK" and fragrant also. (sorry self- praise)




Fragrant rice
1 cup brown rice (wash and soak a few hours)
water - normal water level for cooking rice.
1 yellow onion (cut to 8 pieces)
some ginger (cut to slices)
screw pine leaf /pandan leaf 3-4 pieces (make knot)

Put in all the ingredients to rice cooker and cook.

Curry Prawn and Cuttle Fish
(A)
15 shallot
10 garlic
12 dry chilies (soak with hot water to make it soft)
blend the shallot,garlic and soaked chilies to fine.

some tamarind juice
1 onion (cut to ring)
some prawn
2 dry cuttle fish (soak it over night) cut to slices
some sugar
some salt
2 tbsp cooking oil

methods:
1. Heat the wok, add in oil then fry (A) till fragrant.
2. Add in the onion and continue fry till onion fragrant.
3. Add in the prawn, cuttle fish and some turmeric juice (the sourness according to your taste)
4. Put in some sugar and salt (up to your taste)
5. Dish up.

To Garnish:
hard boiled egg cut to four
cucumber cut to slices
some sambal belacan.

scooped in some fragrant rice, some curry prawn and cuttle fish ,hard boiled egg, cucumber and some sambal belacan.

香饭
1 杯糙米(洗清洁后浸泡数小时)
水- 普通煮1 杯米的水量
1 粒大葱切成八份
一些姜切丝
香叶 3-4 片 (打结)

把全部材料放进电饭煲内煮至熟.

咖喱虾与墨鱼
(A)
15 粒小葱
10 粒蒜头
12 干辣椒(用热水浸泡至软)
把(A)放进搅拌机内搅至幼.

少许罗望子汁
1 粒大葱(切圆)
一些虾
2条干墨鱼(浸泡隔夜) 切片
少许糖
少许盐
2 大匙油

做法:
1. 烧热镬, 加入油把(A) 炒香.
2. 加入大葱继续炒至大葱香.
3. 把虾,墨鱼片和少许罗望子汁加入镬内. (罗望子汁加多少随个人口味)
4. 煮至滚后加入盐和糖调味.
装饰
煮熟的蛋切成四片
黄瓜切片
少许的叁笆笆拉煎辣椒
把香饭放在盘上,加些咖喱虾与墨鱼,煮熟的蛋,黄瓜片及少许的叁笆笆拉煎辣椒即是一盘香喷喷的无椰浆的椰浆饭了.

Soya Jelly "Tau Hu Hua" 冷豆花

This "Tau Hu Hua" is a recipe which learn from news paper. Take this cold soya jelly especially on sunny hot day is very ideally. Normally we take with brown sugar syrup/Gula Melaka syrup. You may eat with mix fruit also.
这冷豆花是从报章上刊登的食谱中学的。在大热天来杯冰冷的豆花是个很好的主意。我家人通常都会把这冰冷的豆花配上椰糖浆/黄糖浆来吃。也可以配上罐头杂果来吃。


ingredients:
1800 ml soya milk without sugar
1500 plain water
10g jelly powder
Method:
1.)bring all ingredients to boil and keep stir it.
2.)After boil then pour to the container / jelly mould and keep to cold then keep in fridge.

Brown sugar Syrup:
100g brown sugar
50g sugar (optional)
30ml water
1.) Put in all the ingredients to the pot then bring to boil.
2.) After boiled let it cold then keep in container.

材料:
1800ml豆水/豆奶(无糖的)
1500ml 自来水
10克燕菜粉
做法:
1.) 把全部材料放进锅内搅匀煮至滚。(要不停的搅拌)
2.) 把(1)倒进杯子或燕菜模。待冷后放入冰箱即可。
黄糖浆/椰糖酱
100克黄糖/椰糖
50克白糖 (随意)
30ml 水
1.)把全部材料放进锅内煮至糖溶即可。
2.)要吃时,把少许的糖浆倒入豆花内就可以了。

A Small Party For My Elder Son

Last Friday was my elder son's birthday. I had set up a small party for him.
上个星期五是我大儿子的生日.为他准备了个小型的茶会.

This is the birthday cake. barley fu chok gingko soup and juicy watermelon.
这是生日蛋糕,白果意米甜汤及西瓜。


Satay, "Tau Hua" and nugget with corn. 沙嗲,豆花及玉米鸡金块。

steam fish ball,pizza and nugget 蒸鱼丸,意大利肉馅饼及鸡肉金块。


Yam cake, Sausage and Fried Bee Hoon 芋头糕,香肠及炒米粉。

Pineapple fried rice and herbal tea eggs 黄梨炒饭及茶叶蛋。
